Restaurante
Casa Pardina | Alquézar
A family-run restaurant in the heart of Alquézar. Every dish is a tribute to local produce, the Sierra de Guara and time-honoured Aragonese traditions.
[About Casa Pardina]
Aragonese Tradition,
carried out with passion
At Casa Pardina, dining is much more than just eating: it is an experience shaped by the land, the seasons and a deep sense of care. Every dish is born out of a respect for the produce of the Somontano region and the belief that authentic cuisine deserves to take centre stage.
Since 2009, we have been working with locally sourced ingredients and recipes that revive the forgotten flavours of Aragon, creating a space where every guest feels part of our story.
A philosophy rooted in the earth
Lamb, Barbastro pink tomatoes, oils from Bierge, local mushrooms and game… our cuisine is a vivid reflection of the landscape that surrounds us: the Sierra de Guara, the vineyards of Somontano, and the fields of the Hoya de Huesca.
Products from the Somontano region
We source fresh, seasonal ingredients from local producers in the region. Locally sourced ingredients in every recipe, authentic flavour in every dish.
Traditional cuisine
Recipes that bring back the forgotten flavours of Aragón: migas, borage, snails, lamb… prepared with skill and a touch of modernity.
Unique Setting, Alquézar
In the heart of one of Spain’s most beautiful villages, recognised as a Best Tourism Village by the UNWTO. With the Sierra de Guara as a backdrop.

The most iconic dish of our region. Lamb with the Ternasco de Aragón designation of origin, slow-cooked to achieve an unrivalled texture.
Barbastro Pink Tomato with Ventresca
Aragon’s most famous tomato, served with premium tuna belly, roasted vegetables and green asparagus. The pure flavour of the Somontano region.
Duck breast with caramelised onions
Duck breast cooked to perfection, served with a caramelised onion reduction that balances the duck’s rich flavour.
Artichokes in tempura with micuit
